These Southeast Asian Style Sticky Wings are definitely the next sticky wings you have to try. Inspired by Ike’s Sticky Wings from Pok Pok in Portland Oregon, I wanted to make my own version of a finger licking, bone sucking wing dish. The Vietnamese ingredients bring a full spectrum of flavour with lemongrass, fish sauce and rich, dark caramel sauce. This recipe is guaranteed to round kick you in the mouth. They’re that good.

You will need:

  • 2 lbs fresh chicken wings
  • ½ cup fish sauce
  • ½ cup sugar (brown or palm sugar)
  • 4 cloves of fresh garlic (2 crushed and 2 thinly sliced)
  • 1 cup corn starch
  • 1 tablespoon butter
  • 1 tablespoon minced lemongrass
  • 1 tablespoon nuoc mau (aka coconut thin sauce) *optional
  • oil, for deep frying
  • a handful of fresh cilantro

Yell the first thing that pops into your head when you read: “Dinner Party”.

If you yelled out something that had to do with a reality TV show where strangers invited each other over, had awkward dinner conversations, and stabbed each other in the back to win 5 minutes of fleeting notoriety, you really need to watch less TV.

If you yelled out something reminiscent of old people crowded around a table slipping slices of dried roast beef under their moustaches while wearing a monocle and dinner jackets, you were probably born in the 90’s and should probably come back and read this piece in 8 years.
